Sweet + Salty Grainless Granola

Sweet + salty grainless granola is the new love of my life. I may be exaggerating…but only a little because Y’ALL this stuff is GOOD.

I’ve mentioned a few times over on my Instagram that I just went through a HUGE move (busy St. Louis to rural Idaho). Aside from the expected anxiety about being far away from my family and friends, finding a job, and the move itself, I have been legitimately sad about being further from my favorite stores like Trader Joe’s, Whole Foods, and even Target. Rural Idaho has no stores, guys.

 

Thankfully, I duped Trader Joe’s grainless granola and – dare I say – actually topped the store version because mine is toasted and full of so much more flavor. Put it on ice cream, oatmeal, bananas, straight into your mouth… whatever works!

Instructions
  1. Preheat oven to 400˚F.
  2. Combine dates, banana chips, flaxseed, cinnamon, and vanilla extract in a food processor. Pulse until ingredients are finely chopped.
  3. In a separate bowl, microwave coconut oil for 15-20 seconds on 80% power to melt.
  4. Add pecans, pepitas, cashews, and chia seeds to bowl with melted coconut oil. Stir to combine. Spread mixture onto a baking sheet prepped with parchment paper.
  5. Bake 10 minutes, stirring once. Let cool.

I think what really seals the deal for this recipe is the oven toasting. There is literally nothing greater than roasted nuts combined with sweet, chewy dates and a generous amount of cinnamon. The first time I made this, I sprinkled it onto vanilla ice cream and a baked peach for the perfect summer dessert! It also pairs perfectly with a huge azzz bowl of oats or a creamy, dreamy smoothie. You do you, ya know?

WHY GRAINLESS GRANOLA?

I want to say real quick that I have NOTHING against grains! They are so versatile, filling, etc. – my love for grains and carbs knows no limits. But, this recipe was originally created out of my need for a flavorful oatmeal topping, and it seemed redundant to put grains on grains. Thus, grainless granola was born. It’s also delicious with a scoop of oats mixed in (add a drizzle of maple syrup to bind it all)!
