Hidden Veggie Oatmeal Muffins

These hidden veggie oatmeal muffins are super easy, perfectly chewy, slightly sweet, and packed with hidden veggies that add tons of fiber and vitamins and good stuff. I’m not one for an overly sweet breakfast, so these have been hitting. the. spot. lately! These are also a great snack alongside some coffee (just like my chewy pumpkin breakfast cookies). Let’s dive in!

Instructions
  1. Preheat oven to 375˚F. Spray 2 cupcake tins with non-stick cooking spray.
  2. Grate the yellow squash and carrot. Use a paper towel to squeeze out the excess water.
  3. Mash bananas.
  4. Combine all ingredients together in a large bowl.
  5. Distribute batter evenly into prepared muffin tins (you should get about 18 muffins).
  6. Top with nuts if desired.
  7. Bake at 375˚F for 24 minutes total (bake 12 minutes, turn, bake 12 minutes).
  8. Let cool and enjoy!

NOTES

  • I went all Inspector Gadget on this recipe with as many appliances as possible. Food processor for the veggies and stand mixer for the bananas. It saved my arms and made this so much easier – but you can definitely make this recipe without them! Just make sure to mash the bananas really thoroughly to avoid chunks.
  • SQUEEZE HARD when you’re squeezing the veggies. I got at least 1/4 cup of water out of them, then got a fresh towel and squeezed again. No soggy muffins here!
  • Store these bad boys in the fridge for up to a week and top with nut butter if you’re feelin’ it.
  • Let the muffins cool completely before putting in the fridge.
