Cookie Dough Oatmeal

Hi, friends! I’ve had a crazy week preparing to travel home for the holidays, but I’m so excited to drop by and share this amazing cookie dough oatmeal with you! This breakfast has been my go-to for the past few weeks, since it’s freezing when I wake up + I need something filling to start my day!

I’m having a real moment with cashew butter lately (don’t worry PB, I still love you!) and it’s going on/in everything. I’m not usually one to recommend specific ingredients, but the cashew butter really makes this recipe cookie-like. You could totally use peanut/almond/soy/whatever nut butter you prefer and still have a satisfying bowl of oats, but for the best cookie vibe, go for cashew! I like this one since its only ingredients are cashews + salt (not sponsored, I just like to share what I’m loving lately!).

My other favorite thing about this recipe is that it comes together in a solid 7-10 minutes and uses ONE dish, which is a Godsend to a non-dish-washer-owner like me (yep, no dishwasher in our apartment. Idaho, what are you doing). So, mix yourself up a bowl of these bad boys and enjoy your dessert-breakfast – you can thank me later!

Instructions
  1. Add oats and almond milk to saucepan. Heat over medium heat until simmering. Cook for 3-5 minutes or until oats are tender.
  2. Stir in butter, brown sugar, and cashew butter until melted.
  3. Remove from heat. Stir in vanilla extract.
  4. Serve warm. Topping suggestions: banana, chocolate chips, shredded coconut, toasted nuts, chia seeds.
